Vegan Mac n Cheese Recipe

Last month, I wrote my first column for Vegan Food and Living Magazine  featuring five of my favourite comfort food recipes for nights when you’re craving something warm and satisfying. Amongst those, was the king of comfort: Mac n Cheese. Notoriously this cheesy carb delight has seemed inaccessible for those following a plant based diet but this version goes to show that eating plant-based doesn’t mean you have to give up your comfort foods.

It’s pretty magical what can happen when you warm up a soy-based cream, dairy-free cheese, garlic and nutritional yeast.

 

Vegan Mac n Cheese Recipe

Ingredients (serves 4)
  • 250g dried pasta
  • 3 tbsp vegan butter
  • 3 tbsp plain flour
  • 200ml plant-based cream (I use Alpro’s soy-based single cream)
  • 100ml plant-based milk (I use oat)
  • 100g of vegan cheese, grated (I use a mix of vegan applewood and vegan cheddar)
  • 1 tsp garlic granules
  • 1 tsp paprika
  • Fresh parsley, to garish
  • 175g vegan bacon, sliced
  • 1 floret of broccoli, chopped
Method
  1. Preheat your oven to 190°C (fan 170°C, gas mark 5).
  2. Bring a large pot of salted water to boil and cook the pasta according to package directions. Drain, and transfer the contents to a large serving bowl.
  3. Meanwhile, melt the butter in a large saucepan, and once melted add in the flour. Mix to combine and form a roux. Continue mixing over a medium heat for a couple of minutes before adding in the cream and milk.
  4. Keep stirring as the mix comes to the boil – the flour should disappear and the sauce will begin to thicken.
  5. Stir in the cheese, garlic and paprika and allow the cheese to melt into the sauce
  6. Add the cooked pasta to the sauce and stir to coat each piece of pasta.
  7. Empty the mix into a baking dish and top with extra grated cheese. Bake in the oven for 20 minutes until golden brown.
  8. As a side dish, pan-fry the bacon and broccoli over a medium heat until the bacon is crispy and the broccoli is soft.
  9. Garnish the mac n cheese with parsley and serve.
