Now the evenings are pulling in, I find myself gravitating towards quick nourishing meals packed with warm spicy flavours for when I get in from work – and this curry is just that! This dish is simple and ready in under 30 minutes!

Spooktackular stuffed peppers! 🎃 This creepy d Spooktackular stuffed peppers! 🎃

This creepy dish is easy to achieve, simply cut the top of the pepper off, scrap out the inside and use a knife to crave a face onto one side (exactly as you would for a pumpkin)! 

I filled mine with chilli and baked in the oven for 10 minutes to allow the pepper to soften slightly!
